so.... what are you using to get the temp to begin with?
i used rfxcom to do this for my freezer...HW - i5 4570T @2.9ghz runs @11w | 8gb ram | 128gb ssd OS - Win10 x64

Events and a timer. Temp below X - set timer to 0, stop timer. Temp above X start timer. Trigger an event when the timer hits whatever times you want.. (maybe 50% of target warning message, at target do some ction.). Timer will continue to run to show how long it has been hot and resets when below X.
I use this logic for lights in the garage. On with motion and when dark. Motion resets and restarts timer. Timer a 5 minutes speaks warning. When timer hits 10 minutes lights go out.

I have wanted to learn that. I just use motion off then lights off
